Ingredients
- 1.5 oz amaretto
- 0.75 oz bourbon
- 1 oz fresh lemon juice
- 0.25 oz simple syrup
- 0.5 oz egg white (pasteurized) or aquafaba
- Garnish: bitters dots, a small almond cookie
Build
- Dry-shake everything 10 seconds.
- Shake again with ice.
- Double-strain into the coupe.
- Dot bitters on the foam; set the cookie beside the glass.

0.75 oz orgeat, 0.75 oz lemon, 2 oz apple juice, aquafaba.Batch for 8. batch all but the egg white; shake to order.
